My  favourite healthy snack or drink

Ingredients

  • 1cup boiled sugar beans
  • 1 egg
  • ¼ cup plain flour
  • 1 tablespoon salt
  • 1 tablespoon turmeric
  • 1 tablespoon curry powder
  • 1 tablespoon cayenne pepper
  • ½ cup cooking oil

Method

  • Preheat the oil in a medium size frying pan
  • Mash the beans with a masher until they become a sticky paste.
  • Add the egg, salt all the spices and mix well.
  • Add the flour to the mixture until it becomes a dough
  • Roll it out on a clean flat surface with a rolling pin to make a square and cut it up into cubes
  • Fry the cubes in the oil until they become golden brown

Serving Size

This bean crumble can be eaten as a side dish or you can add it to your favourite gravy or soup.

One recipe serves 6 people.
